Beat the butter with the honey, then add the yolks one at a time, then the baking powder after dissolving it in the cognac, the ground almonds and the flour. Beat the egg whites into a meringue and add them, stirring gently.
Pour half the mixture into a buttered baking dish. Layer the sliced apples or pears and sprinkle with cinnamon. Cover with the remaining mixture and bake in a medium temperature oven for about 50 minutes.
