Feta cheese with phyllo dough and honey

Ingredients

  • 300g feta cheese cut into 6 rectangular pieces
  • 2 sheets of phyllo dough
  • 3-4 tablespoons Synergasia honey
  • Raw or roasted sesame seeds for serving

Instructions

Defrost the phyllo and keep it in the refrigerator until you are ready to use it. Open the sheets and place the pieces of feta thinly so that they can be rolled up. Wrap each piece in a package. To make the dough stick to the closures, moisten with a little water or egg white. Heat the oil (not until it smokes) and fry our packages two by two, turning frequently with a spatula. Do not pierce with a fork because then the feta’s juices will come out and the oil will splatter.

Serve them on a platter and pour Chrysi Kriti honey and sesame seeds on top.

To make the sheets crispier, you can put the packages in the freezer for 1-2 hours. You can also prepare them in advance – even the night before – and fry them straight from the freezer just before serving.
