Feta in oil with herbs

Ingredients

  • 1 kilo hard feta cheese
  • 2 glasses olive oil
  • 2-3 cloves of garlic
  • 1 small hot pepper
  • 5-6 sprigs rosemary
  • 1 teaspoon of thyme
  • ½ bunch of parsley, chopped
  • ½ bunch of basil, chopped
  • Peppercorns

Instructions

In a glass jar, put half of the olive oil along with the aromatics. Cut the feta into cubes into the jar and top it with the remaining olive oil and put it in the refrigerator. Make sure that the olive oil covers the feta. After 4-5 days, the feta will have absorbed all the aromas from the herbs. If you want a lighter flavor, remove the aromatics and keep the feta in the oil and in the refrigerator. The longer the herbs stay in the oil, the stronger the flavor becomes. It can be stored for over a month in the refrigerator.
