Patoudera (shortbread) cookies

Ingredients

For the filling:

  • 3 oranges boiled with the peel and melted
  • 1 glass of sugar
  • 1 glass of Synergasia honey
  • 2 glasses of crushed rusk
  • 500g. almonds blanched and crushed
  • 1 teaspoon of cinnamon

 

For the dough

  • 1 glass of butter
  • 1 glass of cream milk
  • 1 glass of sugar
  • 1 glass of lukewarm water or lye
  • About 1 kilo of flour

Instructions

Mix the ingredients for the filling. For the dough, mix the ingredients in the order given. Take a walnut-sized piece of dough, make a well in the center and put a little filling inside. Rub the dough so that the filling (the patoudo) spreads inside and shape the cookies. Bake them in a medium temperature oven until golden brown.
